Chocolate Bar owner opening American bakery in West Village

A new American-themed bakery will be coming to 535 Hudson Street in
the West Village, Crain’s reported. Allison Nelson, owner of
Chocolate Bar, a dessert shop on Eighth Avenue, between Jane and West
12th streets, has signed a nine-year lease for the 1,600 square-foot
space on Hudson Street between Charles and Perry streets.

The bakery, named Doughboy Bakeshop, will specialize in
pies, cookies and cakes. Nelson said that while there are many
French-themed bakeries in the West Village, a good American bakery was
lacking. While the lease, with an asking rent of $247 per square foot,
began Sept. 1, the bakery does not expect to move into the space until
the end of the month.

Nelson said she plans to significantly refurbish the
space, which was previously the location of bakery and gelato shop
Irene’s Dolci. Nelson intends to decorate with gray, blue and yellow to
honor service members and civil servants.

On the one hand, she hopes
to cater to many schools that are in the area. But she also said that
“we want it to be the type of place that we envision our fathers and
their friends will feel comfortable going to.”

Doughboy Bake Shop was
