Fontainebleau gets ready for grand opening

Fontainebleau staff members are rushing to prepare for the Miami Beach
hotel’s grand opening this weekend after the hotel was granted a
temporary occupancy
permit Wednesday evening. Waiters have had to practice serving routines
in a parking garage while the ballrooms were being renovated. The
executive
chef is waiting for three tons of fish to arrive to serve guests
expected for
the weekend. But not everything will be ready in time for the weekend’s
events:
two of the hotel’s 11 restaurants are not yet finished. The entire
resort will
close Monday for five more days of preparation and will open again next
weekend.
